Vanilla Cake In A Mug. In a microwave-safe coffee mug or a small bowl add the dry ingredients including ⅓ cup of all-purpose flour 2 ½ tablespoons of granulated sugar ¼ teaspoon of baking powder and a pinch of salt. Add soy milk canola oil and vanilla extract and mix into a batter.
Add the oil water vinegar and vanilla stirring until no dry spots remain and the batter is smooth. Combine the dry ingredients in a 6- to 8-ounce mug bowl ramekin or other microwave-safe container. Add butter to your mug and microwave until melted.
Set aside a good-sized microwaveable mug to bake the cake in.
